

Cypress Hill Winery is a small boutique winery dedicated to making the highest quality wines in limited quantities. All wines are currently produced from California grapes. We typically offer five - six red wines all of which are aged for at least 12 months in either domestic or French oak barrels. During fermentation and aging we strive to maintain the identifying characteristics of each grape variety while promoting the wine’s intensity and complexity.
We do not “final filter” our red wines. We believe filtering damages the complexity and structure of our California red wines. Because we do not filter a small amount of sediment may collect at the bottom of the bottles requiring care when decanting. Also, to maintain the integrity of our wines we add the minimum amount of sulfites necessary to stabilize and preserve the wines during processing and aging. As a result of these practices it is important to take simple precautions while storing our wines. The wines should be stored in a cool (55-65 F.) location with minimal temperature fluctuation and minimal exposure to sunlight. Although inconvenient at times, we believe the benefits are worth these extra precautions.
We currently offer six dry red wines and three white wines. The varieties offered will vary by vintage.
